n 1998, the family opened Casablanca, and Aziz tag-teamed with his mother to cook lunch and dinner. “The hummus was mine,” Aziz said, “but she was the brains behind many of the dishes.” Fathia has “retired” from the grill but still comes in to help out with specialties and prep work. “She does whatever she wants,” Aziz said. Aziz plans to follow his mother’s lead and eventually add more family recipes to the menu. He declined to give up his recipe for hummus.
“That’s my secret,” he said.
Aziz should boast about the hummus – it’s always been outstanding. I can’t wait to get back, even if an early try was so-so. I think they’ll be fine. We’re lucky to have them in town.
