Friday food notes:

  1. Casablanca’s new home is a handsome one. Food’s hit or miss early on (wimpy lamb soup, lackluster hummus) but I’m going to give them time…they’ve earned it. And still the best baba ganoush in town, hands-down.
  2. Lardo. You have to buy some from Brook Harlan at the Columbia Area Career Center. Airy, paper-thin slices dissolving into grilled Uprise Bakery bread…nothing short of magical.
  3. Got two pork bellies and a pack of chops from Newman Farm. Gonna be some serious bacon-makin’ next weekend.
  4. I’m taking a crack at Brasato di Maiale Nero (“Braised Pork in the Black Rooster”) tonight. It’s Batali.
  5. The farmers market opens tomorrow, March 20. See you there.

  2. Hey, along “sort of” the same lines: in Columbia, co-worker and I tried the new Shotgun Pete’s BBQ Shack on the Business Loop in front of Firestone last Friday, opening day. Maybe it was a mistake to go there the first day because they were swamped and it took over an hour to get the food, but maybe he will get more efficient. Now to the food: the brisket I had could have been better. Some pieces were tender and fatty, some were burnt black and very tough and chewy. I will try the pulled pork next time. Friend said his ribs were really good which is a real test of good BBQ. They were served dry with sauce on the side. He said the hot sauce was REALLY hot. BTW, baked beans were very good as well, with good flavor and pieces of BBQ pork mixed in. We will go back.
