Brook Harlan has your sausage

Get it quick. I’m getting mine tomorrow. Oh, and they have a killer espresso machine too.

We have our Andouille along with a few other types of sausages, soups and other Items made by the culinary students for sale from the Advanced Culinary Classes at the Columbia Area Career Center.
 
We are only selling directly from the Career Center Kitchen. 
 
This week we will be open for pick up Wednesday (1/27) 7:00 AM – 5:45 PM, Thursday (1/28) 7:00 AM – 5:00 PM, Friday (1/29) 7:00 AM – 5:00 PM, and Saturday (1/30) 7:30 AM – 3:00 PM. 

 
After this week we will just be open normal school hours (7:00 – 3:15) or later if set up by appointment.
 
The best way to get to the Career Center Kitchen is just to the North side of the Career Center (South of Angelo’s Pizza) West 300 yard just across from the green house is the Culinary Loading Zone.  The kitchen is just inside the double glass doors to the left (room 141).  Please ask for Chef Harlan or Chef Risner.

Below is a list with descriptions of the current sausages, each is $5/lb and packed in .75 lb to 1.5 lb packages
 
Andouille – Spicy heavily smoked Cajun sausage made with Pork, Jalapenos, Onions and Garlic – Great for use in any dish with sausage, especially Cajun; Gumbo, Jambalaya, Red Beans and Rice or by itself grilled.   Stuffed in 1.75 inch Hog Casings (fully cooked, smoked)
 
Habanero Andouille – Spicy heavily smoked Cajun sausage made with Pork, Jalapenos, Habaneros, Onions and Garlic – Great for use in any dish with sausage, especially Cajun; Gumbo, Jambalaya, Red Beans and Rice or by itself grilled.  Stuffed in 1.75 inch Hog Casings (fully cooked, smoked)
 
Cajun Boudin Blanc – Mild Pork and Rice based sausage with Onions and Green Bell Peppers – Great browned with butter in a pan. Stuffed in 1.75 inch Hog Casings (fully cooked, steamed)
 
Mexican Chorizo – Mildly Spicy sausage made with Pork and seasoned heavily with Paprika and herbs. – Great for use in any Hispanic dish. Stuffed in 1.25 inch Hog Casings (fully cooked, roasted)
 
Italian Sausage – Mild Pork sausage seasoned with fennel seeds and a small amount of red pepper flakes – great for tomato sauces. Stuffed in 1.25 inch Hog Casings (fully cooked, roasted)
 
Habanero and Roasted Garlic Beef Sausage – Spicy heavily smoked beef sausage with whole cloves of roasted garlic. Great substitute for sausage to spice up any dish.  Stuffed in 1.75 inch Hog Casings (fully cooked, smoked)

  1. They’re always open, yes, but have an ever-changing list of options. Definitely call before you go. Or just go and buy whatever they have that day.
