On chili

I’m making chii for 30 Halloween revelers and winging it like usual isn’t an option. Any preferred recipes out there?

On a side note, I judged a chili contest one of our divisions put on each fall. They go all out, with decorations and everything. Freaking dry ice was involved. Anyway, four solid chilis and a welcome break from the tough news coming out of Jefferson City these days.

  1. I realize I am way late to help you out, but this is the best chili recipe I have been able to come up over the years.

    1 serrano chili
    3 pablano chilis
    1 pound ground beef
    1 pork tenderloin diced small
    2 tbs chili powder
    1 tbs cumin
    1 tbs paprika
    1 tbs coriander
    1 tbs oregano (flakes)
    1 tbs black pepper
    salt to taste
    1 14oz can diced tomatoe
    1 small can tomatoe paste
    ~10 garlic cloves
    2 large onions

    Blacken the pablanos on your grill and put in a bag. Peel, seed and place in food processor. Seed serano, add to food processor. Rough chop onions and garlic and place in food processor. Add tomatoes and puree (add a little broth or beer is some liquid is needed).

    Brown meat in a dutch oven. Add spices and cook for a litte bit. Add the tomato paste and cook it a few mins. Add the puree. Add broth or beer to get to the thickness you like your chili. Simmer for at least a couple hours. Even better if you cook it the day before. I also like to add a little dark chocolate to mine at the end, but that is up to your taste. I like mine with some caso fresco (sp?) cheese and chopped cilantro. If you like beans put some in. I like my bean free (Texas style).
