Maque Choux

Eric and Joanna Reuter stopped by for dinner tonight. Well, they stopped by to buy my smoker and stayed for dinner, that’s more accurate. We made do even with kid non-cooperation (Mrs. SMEs is still on travel), and with prep done the night before, were able to enjoy a decent maque choux. This is a good, late-summer kitchen sink meal of sorts, a real all-American hybrid of Cajun and Native American influences. Here’s some background, though I didn’t include tomatoes but did add okra and mushrooms to the equation. It wasn’t bad, even if the two year-old’s table manners were.
