Morons, astonished that the blog of St. Louis’ Sauce Magazine would run a picture of pigs alongside a story about pork, revolt. Apparently they were shocked to discover that pork does not come from styrofoam trays and does indeed involve pigs that were once baby pigs. Jeez.
I’ve said it before and I’ll say it again. Meat is tasty to us because we’re supposed to eat it (though not in the amounts most Americans do). But as enlightened modern humans, we should care that our meat animals are treated with a certain degree of basic dignity that factory farms render impossible. Pigs are smart and go literally insane in the concentrated animal feeding operations (CAFOs) that make grocery store pork so cheap.
That we put up with this is, in a word, shameful.
The reason we put up with it is because we’re so removed from the animals themselves. So kudos to Sauce; I need to subscribe.
